NPD Technologist
Role Overview & Responsibilities
We are looking for an NPD Technologist who has bakery experience to join a food manufacturing company based in Aberdeenshire.
You must have craft bakery knowledge with around 1 or 2 years’ experience in a similar role.
Responsibilities:
- Ownership of NPD process across mainly Powder products
- Leading, monitoring, and reporting on development projects.
- Requisitioning ingredients samples and information.
- Liaise with Pilot Operatives on materials, formulations, processing conditions.
- Maintaining accurate records of all recipes, tests, and results.
- Monitoring progress of Projects, testing and dispatch of samples to customers.
- As appropriate, working with customers to assist in the successful completion of a project and to gain wider experience of customer requirements.
- Raising Specifications and Technical Information/Data sheets as required.
- Liaise with Purchasing, Stock Control, Production and QC for arranging factory trials.
- Liaising with suppliers for new/ alternative raw materials supporting Product Development.
- Raising of Recipes, Production and Packing Methods.
- Co-ordination, monitoring, reporting, and testing of factory trial design criteria.
- Understanding of materials, statistical techniques and testing procedures used in the food industry.
Experience required:
- Have a science degree in Food Processing/ Food Science/ Food Technology, Chemistry or Biochemistry.
- Demonstrable practical and technical ability in professional craft bakery skills.
- Ability to problem solve and adapt recipes and processes to achieve optimal product quality. NPD & EPD.
- Knowledge of enzyme technology and its use and application in Bakery.
- Legislative knowledge on functional raw materials i.e., Maximum Permitted Levels.
- Understanding of HACCP/ Food Safety
- Sound knowledge of functional ingredients, including raising agents, emulsifiers, improvers, and enzymes.
- Experience in developing and base compounding in the following categories would be an advantage: Concentrated product formats. ‘All-in-one’ powder mixes (cakes, muffins, pancake, baters etc). Wet compounds (icings, frostings, glazes, custards, fillings etc).
